Making rosé from Cabernet Sauvignon seems like a good idea at the time, but managing the pyrazine herbaceousness makes it an occasionally problematic existence (unless you dial up the residual sugar). This Hirsch Hill Yarra Valley pink has the herbs and a bit of passionfruit but trades in some creaminess. It’s pretty, a bit bony, creamy, and musky, but ultimately a tidy drink.
