Chapel Hill’s Cabernets actually taste like McLaren Vale Cabernet, which is a very good thing for a region with such a proud Cabernet history. The Chapel Hill Gorge Block Cabernet Sauvignon 2021 is dark, leafy, and black-fruited, too. Bitter, a bit warm and dry, there is a certain plushness through the middle that drives it forward. Is it sexy? No. Is it seriously substantial? Heck, yes.
