Why not mature your Yarra Valley Sauvignon Blanc in amphora? Sourced from the Lone Star Creek Vineyard and matured in a couple of 800L Spanish clay amphora. It smells like Sauv Blanc, with plenty of passionfruit, then a green and snappy palate with a little of the leesy x-factor of amphora. There’s nettley, grassy intensity here, although it’s just a bit lean. Class and interest.
