This is Rollo Crittenden’s take on the frisky white wines of the Asturian Coast in northern Spain. If you’ve been to San Sebastian, you’ll know the Txakoli-based high-acid white wine inspo. This is made from Gros Manseng from the King Valley, and it even has some of the CO2 of the Spanish styles for extra zip. It smells of lanolin, marzipan, and preserved lemon, with a crisp and tangy palate of maximum refreshment, if somewhat severe acidity. It’s not wildly complex (nor is it meant to be), but great intensity and vitality. Just add some salty morsels on sticks.
